
Ginger and Berry Baked Oatmeal

From Hansel and Gretel to the baker who made the gingerbread man, people have long known the ginger root to be magical. It’s known to have detoxifying, anti-inflammatory and pain relieving benefits. Not to mention that Goldilocks surely wouldn’t have been so fussy if she’d stumbled across 3 bowls of this perfectly cooked, delectable oatmeal recipe.
Ginger’s magic doesn't always come in the form of men and houses, the root itself has long been considered a cure to many ailments. These ginger-tinged berry oatmeal bars that can nourish any fairytale princess from the inside out. They also contain berries, cinnamon, coconut and almond milk, all ingredients lauded for their proven benefits to health. The recipe is endlessly customizable also; switch ½-1 cup oats for your choice of add in; plant based chocolate drops, nuts, seeds or dried fruit.
Serves 4
Ingredients:
2 ripe Bananas
½ cup coconut yogurt (sub other plant-based yogurt of choice)
2 tablespoons chia seeds
2 cups oats (rolled oats)
½ cup desiccated or flaked coconut
1 ½ cups almond, oat or soy milk
½ teaspoon cinnamon
Knob of fresh ginger, peeled
2 cups frozen berries of choice, divided
Method
1. Preheat the oven to 350°F/180°C. Line a 9-inch x 11-inch baking pan. Grate the ginger and mash the banana in a large bowl.
2. Add the chia seeds, yogurt, cinnamon, rolled oats, almond milk, and half the berries. Stir gently to pour into the baking pan.
3. Arrange the remaining frozen berries on top and bake for 30-35 minutes. The oatmeal should be set in the center but still moist and spongy.
4. Cool 10 minutes then serve sliced, with extra coconut yogurt and berries.
