
Garden Vegetable Breakfast Wraps

There’s a certain type of magic that happens in nature and gardens in fairy tales.
Overgrown trees, a chorus of wind through the flowers, food springing to life from a tiny
seed - how much more magic can something get?!
Fairy Tales often weave the magic of nature into the stories. The secret garden,
Thumbelina, who slept under a cover of rose petals, the Princess and the Pea…so many
of our favorite stories of wonder are inspired by plants and nature. The original Rapunzel
story, the pregnant queen craved a particular fresh vegetable so bad, she risked the
wrath of the evil witch to get it!
The beans in this recipe might not be magical, but they taste just as good as the
ones that grow into oversized beanstalks! Without all the pesky landscaping and giants.
These garden vegetable wraps taste just like Peter Rabbit himself picked the
vegetables bursting with flavor. Use your favorite vegetables, plant-based sauces and
spreads to alter to your personal taste!
Serves 2
Ingredients:
2 tortilla wraps, white
2 tablespoons chipotle hummus(or your favourite hummus)
½ cup baby spinach
½ cups basil, fresh, torn into strips
½ telegraph cucumber or 2-3 Lebanese cucumber
2 spring onions
½ cup cherry tomatoes
1 avocado
½ cup black beans, mashed with a fork
Handful of mushrooms
Sprouts (optional)
Method:
1. Spread half he hummus on each wrap, making sure to spread it to the edges.
Top with a spoonful of the mashed black beans,
2. Slice the cucumber into thin circles, quarter the cherry tomatoes and thinly slice
the spring onions and mushrooms. Cube avocado.
3. Arrange the spinach, then basil, avocado, cucumber, spring onions, tomatoes and
sprouts on top of the beans and tightly roll.
4. Slice in half and serve with extra hummus or sauces.
